Prof. Undurti N Das is a practicing physician and also a scientist with an MD in Internal Medicine from India. He is a President and CEO of a privately held biotech company: UND Life Sciences, Federal Way, WA, USA, Professor and Director of BioScience Research Centre (BSRC), GVP College of Engineering Campus, Visakhapatnam, India and also Professor of Medicine at GVP hospital. Dr. Das published more than 500 research papers and was awarded USA patents. Dr. Das is also Editor-in-Chief of journal Lipids in Health and Disease published by BioMed Central of UK/USA; Review Editor of journal Nutrition of Elsevier and Academic editor of journal: Medicine.

Francesco Puoci is Associate Professor in Polymers and Biomaterials of Pharmaceutical Interest at the Department of Pharmacy, Health and Nutritional Sciences at University of Calabria, Italy.

He has professional expertise in the area of functional food and nutraceuticals. His research activities include the development and characterization of bioactive food ingredients and novel approaches for their stabilization and preservation.

Prof. Puoci participates to a relevant research activity in the functional materials field in collaboration with pharmaceutical companies and research center, he was Principal investigator and co investigator for University of Calabria of different research project.

Dr. Aprea has graduated in Food Science and Technology (University of Naples “Federico II”, Italy) in 2000 and received his PhD in Natural Science at the University of Innsbruck in 2005, specializing in trace gas analysis focused on environmental and food related topics. Currently works, as senior researcher at Fondazione Edmund Mach (Italy), on food technologies and the characterization of food product properties related to sensory perception. His research activity includes statistics and multivariate data analysis. He has also interest into real-time “breath analysis” and the influence of nutrients on human metabolism. He is teaching “Physics and Chemistry of Cooking” for the professional high school. He has published more than 90 scientific publications, 11 book chapters.

J. M. Camiña

Dr Camiña is Professor of Chemometrics and Adjunct Researcher at the National Council of Scientific and Technical Researches in Argentina. He completed his PhD in Chemistry and Master in Analytical Chemistry at the National University of San Luis, Argentina. He has published 36 scientific works and two chapters of books. He is director of four research programs in chemometrics and food analysis in Argentina, as well as director of doctoral theses and fellows. In 2013 he has been awarded in 2013 with the XIII Edition of Agricultural Excellence Prize (Argentina).

C. Duggan

For the past 25 years, Christopher Duggan, M.D., M.P.H. has been performing clinical trials in the fields of pediatric nutrition, gastroenterology and global health. With colleagues at Harvard TH Chan School of Public Health and Muhimbili University of Health and Allied Sciences in Dar es Salaam, Tanzania, Dr. Duggan and colleagues are evaluating the efficacy of micronutrient supplementation in infants and young children born to women with or at risk of HIV infection. Recent studies include the development of new biomarkers of environmental enteric dysfunction, as well as the evaluation of nutritional status on neurodevelopment. Past and present research support has come from the National Institutes of Health, the Gates Foundation, and the World Health Organization. He is Professor of Pediatrics at Harvard Medical School and a Professor in the Department of Nutrition at the Harvard TH Chan School of Public Health.

Dr. Begoña Olmedilla-Alonso obtained a doctorate (Ph.D.) in Pharmacy from the Universidad Complutense de Madrid (UCM, Spain), and holds a degree in Methodology in Clinical Research (UAM, Spain). She is an Research Scientist at the Institute of Food Science, Technology and Nutrition (ICTAN-CSIC),Madrid, Spain, since 2006. Previously, she worked at the Hospital Universitario Puerta de Hierro (Spain), for more han 20 years. She has published more than a 100 scientific publications (Researcher ID: D-1337-2012). Research lines: carotenoids and vitamins (analysis, nutritional status, bioaccesibility and bioavailability in humans), carotenoids biomarkers (of intake, status, visual function, CV risk, etc) and functional foods (design and assessment of their effect in humans).

Dr. Prasad is a Distinguished Professor of Oncology at Wayne State University School of Medicine and Karmanos Cancer Center, Detroit, Michigan. His studies on zinc led to the discovery of its therapeutic role in macular degeneration as well as management of sickle cell disease, Wilson’s disease, acute diarrhea, and pneumonia. His work has been continuously funded since 1963. He has published over 300 articles, scientific journals, and 15 books.

Dileep Sachan is a Professor Emeritus of Nutritional Biochemistry and Metabolism in the college of Health, Education and Human Sciences at the University of Tennessee where he spent 27 years, teaching and research. He has been a faculty at Case Western Reserve University, Cleveland, OH and at Vanderbilt and Meharry medical colleges in Nashville, TN. He lives in a Nashville suburb and spend some time at the Vanderbilt and an active in reading and writing including scientific papers and sharing experience with former students and colleagues around the world. Chuan-He Tang

Dr. Tang is a full professor in the Department of Food Science and Technology of South China University of Technology. Dr. Tang obtained a doctorate (Ph.D.) in Food Science from South China University of Technology, China, and a Master in Food Engineering from Wuxi University of Light Industry (Jiangnan University now), China. Dr. Tang has published more than 120 peer-reviewed papers in international journals, and edited two books. Currently he serves as an associate editor of Food Biophysics, and editorial board memberships of many international journals. His recent research interests include the development of plant proteins as functional ingredients, food colloids, and encapsulation and delivery of bioactives.

Prof. N. Benkeblia is the head of the laboratory of crop science in the life science department and the head of the tree and aromatic crops laboratory in the biotechnology center, the university of the West Indies, Mona Campus. Prof. N. Benkeblia research work focuses on pre- and post-harvest physiology and biochemistry of fresh crops, and the effects of environmental factors, biotic and abiotic stresses on the metabolism and the metabolome of plant tissues.

Dr. Giuseppe Maurizio Campo was born in Novara di Sicilia, Italy, September the 16th, 1963. He followed doctoral Degree Courses in Biological Sciences at the University' of Messina from 1987 to 1998 he attended the Institute of Pharmacology, School of Medicine at the University' of Messina. In years 1990-1992 he worked as scientific adviser of the FIDIA Research Laboratories of Abano Terme and the Cifa-gesco Consortium of Rome for the study and development of new drugs. In the October 1992 he obtained the Specialization Degree in "Biochemistry and Clinical Chemistry" at the University' of. Messina. In the year 1993 he obtained a postdoctoral scholarship of the CNR for a stage at the Department of Medical Laboratory Sciences and Technology, at the Karolinska Institute, Huddinge University Hospital, Stockholm, Sweden. In 1994 he got the PhD in "Experimental Medicine", at the University' of Messina. Since December 1998 Dr. Campo is Aggregate Professor of Biochemistry at the Department of Clinical and Experimental Medicine, School of Medicine, University of Messina. In June 2014 he obtained the eligibility to became full Professor of General Biochemistry.

Dr. Udenigwe is an Associate Professor of Food Biochemistry in the School of Nutrition Sciences, University of Ottawa. He obtained his Ph.D. in Food and Nutritional Sciences from the University of Manitoba. His research interest includes the chemistry of food peptides and their interaction with biochemical processes in ameliorating metabolic syndrome, designing nanostructures for delivery of food bioactives, food matrix interaction with bioactives, food protein allergenicity, and functionality of insect proteins for food structuring and human nutrition. Dr. Udenigwe has co-authored over 70 journal articles and book chapters, and received several recognition including the IAFoST Early Career Scientist and IUFoST Young Scientist Awards.

Dr. Laviano also holds a position of Visiting Research Professor at Upstate Medical University, Syracuse, NY, USA. Dr. Laviano’s main research interests are: regulation of food intake under physiological and pathological conditions, disease-associated anorexia and cachexia, hyperphagia and obesity, impact and treatment of hospital malnutrition. Theresa A. Nicklas, DrPH, is Professor of Pediatrics at the USDA/ARS Children’s Nutrition Research Center at Baylor College of Medicine, Department of Pediatrics. She is studying the environmental influences on eating habits of preschool children and whether eating patterns are predictive of obesity between childhood and young adulthood.
