Dr. Mutamed Ayyash is an Associate Professor of Food Science (Food Microbiology) at the Department of Food, Nutrition, and Health at United Arab Emirates University (UAEU), UAE. His research interests focus on probiotics and its applications in fermented food products, especially camel milk and its products (yogurt, cheese, whey). Dr. Ayyash has published several articles that investigated the health benefits of fermented camel milk together with national and international collaborators. These research activities focus on finding novel methods to overcome the challenges of making fermented products from camel milk. Functional foods and exopolysaccharides are among the research interests of Dr. Ayyash.
