Giuseppa Di Bella, PhD, Associate Professor of Food Chemistry at the University of Messina (Italy), teaches Food chemistry at Degree Courses in Veterinary Medicine and in Gastronomic Sciences. Actually she is member of Professor College in the PhD course of Chemical Sciences. Prof Di Bella studies natural and environmental complex-matrices through chromatographic, spectrometric and spectroscopic techniques (HRGC, HPLC, HRGC/MS, ICP/OES, ICP/MS). Today her scientific production includes many articles on indexed journals, proceeding and book chapters edited by international publishers.

Christos Soukoulis holds a MSc in Chemical Engineering (2004) and PhD in Food Science and Technology (2009) both granted by National Technical University of Athens (NTUA), Greece. From 2009 to 2013 he worked as postdoctoral researcher at the Foundation Edmund Mach, San Michele a/A, Italy and research fellow at the University of Nottingham. As of 2013, he works as researcher at the Luxembourg Institute of Science and Technology (LIST). His research interests reside in the isolation and valorisation of biopolymers (polysaccharides, prebiotics, proteins etc.) from underutilised food sources aiming to the development of innovative added-value functional food product concepts.

R. Hancock

Dr Hancock is a senior research scientist and group leader at the James Hutton Institute with 20 years experience. His primary interests are concerned with the biochemical determinants and impact of biotic and abiotic stress on crop and food quality. He works in a range of crop and model species primarily soft fruits, potatoes and cereals. His laboratory uses physiological, biochemical, analytical and molecular techniques as well as transcriptomic and metabolomic approaches to understand the impact of stress on crop and food quality at a systems level. Fundamental work is complemented by applied research facilitated through joint research projects with industrial partners such as PepsiCo and GlaxoSmithKline. Dr Hancock has authored 50 peer reviewed manuscripts, several book chapters and four patents.

I have developed my research career in the area of Food Science and Technology. Specifically, I work on the revalorization of agro-industrial by-products by means of production of new ingredients rich in proteins, such as protein isolates and hydrolysates. In addition, I study the generation of bioactive peptides after protein hydrolysis. These biological activities are tested by chemical methods, in culture cells, and in clinical trial in humans. To date, I have published more than 50 articles and my h-index is 21. I have participated in 22 competitive projects and 12 projects funded by food companies. I have participated in 21 congresses and conferences with 29 contributions.

Prof. Dr. Mohamed F. R. Hassanien is currently working as a Professor of Biochemistry at Zagazig University (Egypt). Prof. Hassanien obtained his Ph.D. in Food Chemistry from Berlin University of Technology. Prof. Hassanien published more than 160 articles in international peer-reviewed journals with high IF as well as several books and book chapters (recent h-index is 28). Prof. Hassanien received Abdul Hamid Shoman Prize for Young Arab Researcher in Agricultural Sciences, Egyptian State Prize for Encouragement in Agricultural Sciences, European Young Lipid Scientist Award, AU-TWAS Young Scientist National Awards in Basic Sciences, Technology and Innovation, and Atta-ur-Rahman Prize in Chemistry.

Currently he is working as a Collaborator Researcher at UNICAMP (2011-actual). He has participated in several research projects with both, public and private funding. His research is related to the production of natural formulations (extracts, encapsulates, emulsions, hydrolysates, etc.) using pressurized fluids (sub/supercritical water, CO2 and ethanol).
